The first taste was all it took to become a favorite in our house. It is by far, the most requested recipe from our kids. My kids love chicken nuggets – all kinds. But, their favorite by far is Chick-fil-a nuggets. So, when I came across this recipe on Pinterest, I knew we had to try it. Back in February I did a short review of this amazing recipe, but since going gluten free we’ve revamped it. And you know what??? They’re still just as delicious – if not BETTER!!!!
Jake’s Gluten Free Sweet ChickenNuggets
Adapted from this recipe
4 fresh, skinless and boneless chicken breasts
milk
2 egg
3 cups Bob’s Red Mill All-Purpose Baking Flour Blend
5 TBSP powdered sugar
1 TBSP salt
2 tsp pepper
2 tsp dill
1 1/2 tsp Paprika
dash of Poultry seasoning
1 tsp garlic powder
1 tsp onion powder
peanut oil (is best) but you can use canola oil
Trim any fat away from chicken. Cube chicken into bite size pieces.
Place chicken in bowl and cover with milk. Whisk 2 eggs in a separate bowl and pour into milk and chicken. Mix to combine. Let it ‘marinate’ for 2-4 hours in the fridge. This will make the chicken very nice and tender.
In a glass (or plastic) 9×13 pan combine all dry ingredients until mixed well. Drop chicken chunks into mixture.
Use your fingers to coat thoroughly.
Toss 6-8 nuggets into your deep fryer or place about 2 inches of oil in a medium deep pan. Over medium-high heat (more towards the high side), heat oil until hot (375°). (If you don’t have a thermometer, you can test the oil by dropping a few drops water into it. You want it to sizzle and not pop too much. Adjust your heat if necessary.)
Let them cook until golden brown. Cook only put one layer of nuggets at a time, otherwise you will have parts that don’t cook because they stick together. You may still have to break the nuggets apart (and away from the fryer basket) as they cook so that they will cook well on all sides.
NOTE: These scrumptious little nuggets leave quite a bit of “gunk” behind, so be sure to strain and/or clean our your deep fryer before using it again.
Always double check to see if any chicken you make is cooked through. I use a meat thermometer to verify the chicken is cooked through.
Remove and drain on a paper towel. Repeat until all nuggets are cooked.
Serve with your favorite sauce! Our kids like Caesar dressing and barbecue sauce.
It’s also great to serve with green beans and a nice salad or some salty french fries!!
