If you’re like me, sometimes Lunch just seems to sneak up on you. One minute I’ll be going along doing laundry or dishes and the next thing I know, my kids think they’re going to starve to death because it’s lunch-time. Then, I find myself scrambling for something quick to make them, while trying to make it somewhat nutritious!! Has this ever happened to you? I’m sure I’m the only one, right? Yeah…that’s what I thought.
So, like any good SAHMom I went looking on Pinterest for some easy-to-make and healthy lunch options. Now, there are some tried-and-true lunches that my kids like, but I wanted (and needed) more options. So, today I’m sharing with you a list of Easy Homemade Lunches you can make for yourself and the kiddos while you’re preparing for thatHoliday meal.
Hot Dogs – My kids love hot dogs. Try as I might, I can’t get them away from hot dogs. Strangely my kids don’t eat them on a bun though. They like them sliced up, heated until “super hot” (according to Mister Mouse) and served on a plate with a “real” spoon. No ketchup or mustard or sauce of any kind – just the hot dogs and that’s it. Occasionally they will ask for some chips to go along with them, but usually it’s just the hot dogs by themselves. (I know…not the most nutritious, but hey…it could be worse, right?!)
Frozen Homemade Pizza – We have made our own pizza dough for over a year now. And recently we adjusted the favorite recipe for our new gluten-free lifestyle. Last time we made the Gluten-Free pizza, we had some leftover dough that I quickly made into personal size pizzas that I froze and saved for later. It was just as delicious as the fresh baked pizzas!! A fun way for everyone to have the pizza toppings they like!!
Homemade Pizza Pockets – Just like these breakfast pockets, you can easily make some with your favorite pizza toppings in it and freeze them for a quick and easy lunch!!
Homemade Chicken Nuggets – We found this recipe a while back and have tweaked it and fallen in love with these nuggets! The Hubster is typically the one who makes this dish and we usually have leftovers. We simply bake them at 250 degrees for about 10 minutes (or less) in the oven to re-heat them. You could easily make a large batch of these to freeze and pull out whenever you need them!! What’s better than chicken nuggets? HOMEMADE chicken nuggets!
Quesadillas – We simply make these with flour (or corn) tortillas, shredded cheese and some ground turkey, seasoned with our homemade taco seasoning. If you make the meat ahead of time, this is a quick and easy lunch!!
Grilled Cheese – My kids love plain ol’ grilled cheese. But would it be fun to change it up a bit? Here’s a few twists on the old classic:
Avocado & Bacon Grilled Cheese
Macaroni and Cheese – This is like the iconic kid food, isn’t it? We make our own Homemade Mac & Cheese and have for several years. Of course, now we make it with gluten free noodles and still a favorite. Here are some fun ways to mix it up a bit though.
Pre-Made school day lunches – This site gives great tips on how to make a week’s worth of healthy lunches for the school week.
Homemade Freezer Burritos – These Southwest Chicken burritos look so yummy!! If you don’t like those, make your own burritos with what you do like and freeze them for easy lunches!
Just for Mom
Salads – Salads are always a good choice for a healthy lunch. The trick is to have the time to make it! Some salads are easy to make ahead and they keep really well. Like the Cucumber, Tomato, Onion Salad or the Mozzarella, Tomato & Avocado Salad. You can also make a large batch of chicken salad to serve with a croissant, a slice of homemade bread or just some crackers!
